The skinny on protein:

It has been observed that a horse can pull a plow around a field all day, but if you were to hitch a lion to a plow, he would fall from exhaustion after one or two trips across the field. Present research indicates that an optimal amount of protein for the average man is 56 grams a day, and 44 grams for a woman. An unrefined diet easily meets these requirements, even when no animal products are included. People's dietary habits generally place them in one of three groups. Vegetarians who eat no animal products. Lacto-ovo-vegetarians who eat no meat, but who do include eggs and dairy in their diet (hello, that’s me). And, of course, non-vegetarians. In studying these three groups of people, it was found that on an average, a vegetarian consumes 83 grams of protein a day; a lacto-ovo-vegetarian consumes 90 grams; and a non-vegetarian takes in 125 grams. An herbivore has flat teeth designed for grinding food, while a carnivore's teeth are designed for tearing. The intestines of a herbivore are 24 to 26 feet long, allowing the necessary time for digesting the nutrients found in plants, while the intestines of a carnivore are only 8 feet long, allowing for rapid digestion of flesh before it putrefies in the body. The saliva of a herbivore contains alpha-amylase, the sole purpose of which, is to digest the complex carbohydrates found in plant food. The saliva of a carnivore contains none. The digestive system of a carnivore produces ten times the amount of hydrochloric acid that the system of a herbivore does, a digestive juice that is necessary for meat digestion. As with many things, that fact that some is good, it does not necessarily follow that a whole lot more is better. Studies have shown that high-protein diets cause animals to grow more rapidly and develop earlier, but unfortunately, these animals also die sooner. Unlike certain vitamins that our bodies can store and use at a later time, the body has no means of storing excess protein. The waste that is produced and thrown off during the metabolism of protein, puts a strain on the liver and the kidneys. In older women, osteoporosis (thinning of the bones) is of special concern. While a diet deficient in protein can lead to a weakening of the immune system, excessive protein in the diet has also been shown to lead to a depletion of body calcium. A decided advantage to non-animal proteins is the fact that they come without any of the undesirable food elements that are generally associated with animal food products, including fat and cholesterol, both of which have been implicated in heart disease, as well as cancer, both of which are major health concerns.

Dr. Irving Fisher, professor of political economy at Yale University, concluded a series of experiments testing the endurance of forty-nine persons, about thirty of the number being flesh abstainers. The first endurance test was that of "holding the arms horizontally." The flesh eaters averaged ten minutes. The flesh abstainers averaged forty-nine minutes. The longest time for a flesh eater was twenty-two minutes. The maximum time for a flesh abstainer was two hundred minutes. The second endurance test was that of "deep knee bending." The flesh eaters averaged 383 times, the flesh abstainers 833. Professor Fisher explains the results on the basis that "flesh foods contain in themselves fatigue poisons of various kinds, which naturally aggravate the action of the fatigue poisons produced in the body." In the long-distance races in Germany, the flesh abstainers have invariably been easy victors. Upon this point, Professor von Norden, in his monumental work on "Metabolism and Practical Medicine," says: "In Germany, at least, in these competitive races, the vegetarian is ahead of the meat eater. The non-vegetarian cannot compete with the vegetarian in the matter of endurance in these long-distance walks. The vegetarian is ahead in the matter of rapid pedestrian feats."

Hows come?

–“The Strength Delusion”:

When an animal is slaughtered and the blood ceases to circulate, this stream of urinary products on its way to the kidneys for excretion stops in the tissues, and is devoured by the consumer with the flesh.

–“Poisons Contained in a Meat Diet”:

The seeds of death and decay are in every animal organism; and just as soon as the heart ceases to throb, the arteries cease to pulsate, and the spark of life leaves the animal, decomposition begins. (Aw, I won’t believe it until O’Reilly says it.) The common practice of keeping meat until it becomes tender, or "ripens," is simply waiting for decomposition to advance until the meat fibre is softened by the process of decay. Canned meats are especially liable to contain the poisonous ptomaine. (Aw, O’Reilly can say big words too.)

–“Disease Prone Diet”:

In the colon, flesh foods rapidly undergo decomposition, giving rise to numerous poisons, which are absorbed into the blood, and are toxic to the nervous system, and cast an additional burden upon liver and kidneys. Bouchard found that the fecal and urinary excrement of carnivorous animals is twice as poisonous as that from an herbivorous animal.  (So what Bouchard has to deal with in scientific material, I have to deal with in people.)

–“Anatomy and Physiology”:

Even a kindergarten study of the structure of the body reveals the fact that man was not intended to be a carnivorous creature. He does not possess the rough, raspy tongue of the cat family, the long, pointed canine teeth of the lion, the sharp claws of the tiger, or the talons and hooked beak of the eagle. In the carnivore, the alimentary canal is very short, being only three times the length of the body. In herbivore, as in sheep, it is thirty times the length of the body. In frugivora, such as apes, monkeys, and man, it is twelve times the body length. (Aw, that’s not good enough for O’Reilly! – You don’t get to the top if you tell people what they don’t want to hear!)

Not only does meat contain less nutrition than is found in the natural diet, but it contains certain fatigue poisons. All the activities of an animal involve tissue changes; and as a result of these, waste products are constantly present within the tissues, and are in the process of elimination.

When an animal is slaughtered, the eliminative processes cease, and the waste products, on their way to the kidneys for removal, are stayed in the bloodstream with stopping of the heart and circulation. These body wastes, still poisonous, are sold and eaten as so much "juicy" steaks, pork chops, lamb cutlets, and other forms of meat.

The two world wars forced nations to carry through large-scale food conservation programs. With the shortage or animal proteins and fats, the knowledge of nutrition was called into service to find substitute foods. The result of their findings not only saved millions from disease and starvation, but developed some of the most striking and convincing arguments in favor of vegetarianism. Many eminent authorities have been forced to acknowledge not only that the vegetarian diet is adequate for human nutrition, but that it has definite advantages over the flesh diet.

–“Man Not Built for Meat Eating”:

Animals that eat flesh have long, sharp, pointed canine teeth for tearing their food apart. These set considerably apart from the other teeth. The molars are saw-shaped. Man's teeth are practically of even length, and set in a complete dental arch, with no space between them. In number, form, and general arrangement, they are almost identical with the teeth of frugivorous animals. Man's teeth are distinctly different from the teeth of other classes of animals, and especially of the carnivorous.

In the carnivorous animals, the alimentary canal, or food tube, is short, only three times the length of the body from the tip of the nose to the end of the backbone. In the frugivorous, it is twelve times the length of the body.
